Dong Ding is a traditional Taiwanese oolong. Its recipe comes from more than hundred years ago. The tea has its own distinct smoked flavor and is recognized by tea lovers as one of the most unique Taiwanese Oolongs.

Dong Ding is translated from Chinese as “Frozen Peak”. The uniqueness of Dong Ding flavor is reached by special technique where leaves are baked using traditional oven and charcoal. The temperature level and duration of roasting vary according to different factors like: humidity level; season of the year; conditions of tea leaves as well as many other. Comparing with roasting made using modern machines, this process takes more time and effort. Tea master applies skills accumulated by previous generations to achieve the best quality in the outcome.

In Nan Yan Village (China, Fujian, Anxi County, Xi Ping Dist.) there was one tea farmer. He was also good at hunting and had a very dark face.  His family name was Long (dragon), that is why everyone in the village called him “Dark Dragon”. Once he went up to mountains to gather some tea leaves and hunt wild animals. After few days he came back with lots of tea leaves and killed animals. All his family started to prepare the meat and everybody totally forgot about tea leaves were left outside. When they realized that leaves were left outside, the fermentation process has already started. Surprisingly the tea became very fragrant and tasty. After that Chinese tea farmers learned that when tea leaves are fermented the taste of this beverage can become more interesting and fragrant. After that the fermented tea has got the name “Oolong” or Dark Dragon.
